Cinnamon Zucchini Muffins
One of my favorite things to do with my kids is make muffins. I love the way my home smells while they bake, the little hands stirring the flour & sugar, and the giggles that come along with all of it. We make these at least once a week so I thought I would share the recipe with you so you can create those memories with your kids too.
Cinnamon Zucchini Muffins
INGREDIENTS:
1 1/2 Cups Flour
1 Cup Sugar
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
2 Large Eggs
1/2 Cup Oil
1 tsp Vanilla
2 Cups Shredded Zucchini
1 tsp Cinnamon
DIRECTIONS
Preheat Oven to 350.
Whisk Flour, Sugar, Cinnamon, Baking Powder, Baking Soda, and Salt
Whisk Eggs into Oil, then stir in Vanilla
Mix Wet and Dry Ingredients – Fold in Zucchini
Fill tins 3/4 Full
Bake 20-22 minutes or until toothpick comes out clean
