3 Meals We Always Have Ingredients For…
Dinner…anyone else feel like it comes at your kids melt down time? I swear my littles always loose it right before I start thinking about dinner. While I do meal plan and buy things each week for the meals that I’m making I always buy things to have on hand for 3 meals that are super quick to make when my kids are melting down, that we need on an unexpected busy night, or anything else that comes up. These are simple go-to meals that don’t take very long & can even freeze if needed. I hope these help you to be have a couple meals that you can always pull out if needed!
TACO SOUP (really more like taco casserole)
1 Can Black Beans – Rinsed & Drained
1 Can Pinto Beans
1 Can Corn
1 Can Diced Tomatoes
1 Packet Taco Seasoning
1 lb Ground Beef
Brown Ground Beef with Taco Seasoning. Add all other ingredients to a pot and heat, add ground beef & serve with chips!
WHITE CHICKEN CHILI
1 lb Cooked Shredded Chicken
1 Can Northern White Beans
32 oz Chicken Stock
1 White Onion
1 TBSP Minced Garlic
7 oz (1 Can) Green Chilis
2 tsp cumin
2 tsp oregano
1/2 tsp cayenne
Cook & Shred Chicken or use Rotisserie Chicken, set aside. Sauté onion in soup pot, once translucent add in minced garlic, green chilis, cumin, oregano, cayenne, and chicken stock. Head through then add chicken. Serve with tortilla chips, garnish with cilantro and sour cream if desired.
SALSA CHICKEN
1 packet taco seasoning
2-4 large chicken breasts
1 jar salsa
Put all ingredients in crockpot, cook on low for 6-8 hours. Serve as chicken tacos, enchiladas, on nachos, etc.!
