I have found that if I don’t eat breakfast I am just asking for a rough day… I however also don’t feel like I have a lot of time to eat breakfast. I wanted something that is healthy, would make an impact in my day, and keep me feeling full for awhile. I have tried a few protein pancake recipes that I liked, however they just weren’t exactly what I wanted. I came up with this yummy chocolate, coconut, banana, protein pancake recipe that is so yummy that I just had to share this goodness with you. We make a big batch on Saturday mornings and throw them in the fridge to eat all week long. We eat them will pure maple syrup and they seriously are so yummy.
R E C I P E
1 Cup Coconut Flour
1 1/2 Cup Oats
1 Cup Cottage Cheese
1 Scoop or 1 EAS 100% Whey Single Serving Packets (If you don’t want chocolate you can do vanilla and they are yummy too!)
2 Cups Milk
I N S T R U C T I O N S
Add all ingredients into a blender and blend until smooth
Put batter in circles on to a griddle and let cook until they start to bubble
Flip Pancakes over and cook until firm in the center
Eat with fruit, pure maple syrup, or whatever your heart desires!
