Sunday breakfast is always a favorite time for our family. It is one day a week that we can sit down together and eat breakfast, relax, and just enjoy each other. I really try hard to make a point to make Sunday breakfasts something that we do every week and things that are easy for me to make, but something out of the ordinary or a little bit more special. I recently made these fun pancake kabobs and I thought they were so fun. They make pancakes a little bit more exciting and they would be perfect for a brunch!
Our favorite pancake mix is Aunt Jemima because of how light and fluffy they always come out. I swear they cook to perfection every time no matter if I do something to accidentally mess them up or not. All you will need is some Aunt Jemima Pancake Mix, Aunt Jemima Syrup, kabob skewers, and your favorite fruit. Simple right?
First you will make the pancakes to the directions on the box, easy right? Some days I feel like even making pancakes is pushing it for me so the easier the recipe the better. I mean, adding water and having the pancakes taste this good? I didn’t think anything else needed to be added personally, but you can always add blueberries, chocolate chips, or anything else you love to your batter.
You will want to make small pancake circles so they aren’t too heavy on the skewers. You will fold them in half, however, I made my circles about 2.5-3 inches each.
Next, grab your skewer and I found if you place a bigger piece of fruit (blueberries worked best for me) on the bottom that it will hold everything else on the skewer and they won’t slide off. So, place your fruit of choice at the bottom of the skewer and then fold a pancake in half and place it on the skewer.
Continue to layer fruit and pancakes until your skewer is as full as you would like it.
When you are finished, serve them with some yummy syrup and you are ready for breakfast! Isn’t it such a simple and easy way to dress up some pancakes and to make them be a little bit more special for any occasion?
