We all know someone that has a lactose intolerance. Let’s be honest here, I’m pretty sure that Zach does, but he won’t admit it. I also am trying to eat a high protein diet because I am still nursing King and want to make sure I am putting in enough and good nutrients into my body to keep myself healthy and give him the best nutrients possible.
We are “treat” people at our house. Every night we have a treat together. I have been trying to eat healthier and add more protein in my diet so I have been trying to find treats or things that give me more protein. I decided that I would make my own yummy treat that would be good for Zach (lactose free) and high in protein for myself. I decided on making a yummy lactose free pineapple icecream! Thanks to fairlife it is not only lactose free, but it is also high in protein! Fairlife has 50% less sugar, 50% more protein, and 30% more calcium than regular milk. That is a win win if you ask me!
I N G R E D I E N T S
1 1/2 Cups Crushed or Dried Pineapple (really any Pineapple will work!)
1 1/2 Cups fairlife
2 1/2 Cups Pineapple Juice
Lime Juice of 1 Lime
1 tsp Vanilla
Sugar if you feel like it needs it ๐ We don’t add any to ours! You can add up to 1/3 Cup
D I R E C T I O N S
Add all ingredients to your blender and blend until smooth. No one wants chunks in their icecream that aren’t supposed to be there! Add to your icecream machine and let it go! We put ours in our machine for an hour. Take it out and enjoy!

Can I use any type of fruit in this recipe or do I need to make adjustments .

I haven’t tried it with other fruit, just pineapple. I think it should be okay, but I’m not positive ๐
