The Perfect Summer Lunch/Snack For On The Go All Summer Long
It’s summertime and the kids are home, I don’t know about you but they can eat us out of house and home in one sitting. So I’ve created this super simple summer snack recipe for all summer long. It’s crackers with dip and you will love it for a quick snack! We love to take it on the go to park, eat it in the car on our way to wherever we are headed, or at the pool! It is super simple, healthy, and King is obsessed with it too.
Does anyone else feel like you get in the car or wherever you are going and your littles are saying they need a snack? Or let’s be honest this nursing mama is hungry all the time too. I have been trying to swap out things that we eat all the time to healthier options and snacks is a huge thing that we have been working on. I am the queen of snacking and have shared that love with King. You will never find us without something to munch on in the car, diaper bag, or in King’s pocket (even though it is smashed ha).
I wanted to share some of our favorite on the go healthy snacks with you and some of them we even eat for lunch options!
– crackers & cottage cheese
– cheese & crackers
– crackers & veggies
– fruit leather
– dried fruit
– veggies (we cut them up and put them in baggies)
– crackers & chicken dip (recipe below)
When I snack I love a crunch so crackers are a must along with some veggies. Swapping out my crackers for a healthier option has been something that I have had a hard time with. I swear generally healthy crackers don’t taste like the non-healthy ones ha…but with how much I eat crackers I knew that it needed to be done. I snagged a bunch of flavors of Crunchmaster crackers and am obsessed. King is equally obsessed with them and asks for them all day and I don’t even care about handing him the bag. Our favorite flavors are the Multigrain and the Tuscan Peasant!
Our favorite way to eat our Crunchmaster crackers is with chicken dip as King calls it! It is something super simple that we can quickly make as we run out the door and is such a healthier option to snack on than driving through the drive up!
C H I C K E N D I P R E C I P E
– 1 can canned chicken (we use Kirkland brand)
– plain greek yogurt
– avocado
– you can season with garlic salt, season salt, salt and pepper, etc. if you would like
Drain your chicken all the way and put into a Tupperware. Add plain greek yogurt until it is the consistency of your liking. We do about 1/4 to 1/2 cup. Dice avocado and add to the chicken mixture. If we are on the go sometimes we just have the chicken dip plain and it is still yummy! Scoop on to your favorite Crunchmaster crackers and have as a snack or lunch when you’re in a pinch!
We always keep a bag of our Crunchmaster crackers in our car (I even have one hidden) for when we are on the go because we all love them and they are such a healthier option. I hope this helps you to have another healthier snack option for when you are running out the door!
