I think we are all aware that making dinner is something hard for me. I never know what to make, then I am stressed out the entire time I am making it because it is taking longer than I thought it would and everything in between. I wanted to share with you one of my yummy go to recipes that we eat at least once a week at our house. It is tilapia burrito bowls. They don’t take very long to make, they are super hearty, and healthy for you too. This recipe my entire family loves, King eats is super well, and it fills everyone up! So, let’s get started!
INGREDIENTS:
1 tbsp chili powder
1 tbsp cumin
1 tbsp cayenne pepper
1/2 tsp cayenne pepper
1/2 tsp paprika
1/4 tsp onion powder
1/4 tsp oregano
4 tilapia filets
1 tbsp minced garlic
1 can corn drained
1 red onion diced
1 green bell pepper diced
1 can black beans drained and rinsed

Your favorite rice
First, you are going to have thawed tilapia, mix together the chili powder, cumin, cayenne pepper, paprika, onion powder, and a pinch of oregano. After you have those mixed together, sprinkle a generous amount on each piece of tilapia and rub the spices into both sides of the fish. Cook the tilapia on a pan on the stove letting each side get crunchy. Make sure that you cook it all the way through, the fish will be white throughout and flakey.
Next, set the tilapia to the side, in a cast iron pan, mix together 1 tbsp of minced garlic, 1 can of corn, 1 small red onion diced, 1 green bell pepper, 1 can of black beans drained and rinsed, and 1 can of Hunt’s diced tomatoes. Drizzle olive oil in your pan and put all the listed above ingredients in it. Let the vegetables roast and blacken only stirring every 2-3 minutes. Cook until the vegetables are softened and caramelized.
Next, plate with your favorite rice, put the vegetables on top, and lastly your tilapia! Simple and quick right!? I also love that this is a heart healthy recipe. My sweet grandpa had a heart attack that ended up in 6 bi-pass heart surgery. Ever since then, eating heart healthy foods is something so important to me. I love that it is something so important to Hunt’s too. Hunt’s is donating to the American Heart Association in support of American Heart Month (February), they are donating $50,000. Absolutely amazing right? I love finding out that brands that I love and use on a daily basis are giving back and supporting amazing causes!
