VANILLA WAFER COCONUT ICECREAM CAKE

Do you ever see snacks or treats that take you back to your childhood? Just like the 90’s trends are coming back in fashion, my favorite snacks and treats are coming back at our house. Let’s all just bring back and enjoy the Keebler snacks and cookies, because let’s be honest, we all know they are our favorites right? Vanilla Waffers have always been a staple in our house. I remember eating them when I was younger sitting on my parents patio trying to get a good tan ha. I wanted to bring back these treats and introduce them into King’s childhood. It is so fun to me to bring things that were staples in my childhood into King’s. I made this yummiest Coconut, Wafer, Ice Cream cake and babes, it will make your tastebuds go crazy! The perfect crunch of the vanilla wafers with the coconut flavor and the cold ice cream is to die for.


- 1 box Keebler Vanilla Wafers
- 1 Cup Shredded Coconut
- 1/2 cup butter
- 1 container of Ice Cream (flavor of your choice)
- Fresh Fruit (optional)
- Syrup of choice (optional)
- First, crunch up your vanilla wafters, mix them with the shredded coconut. Split this mixture in half and leave half for the top of the cake. Melt your butter and mix with one half of the wafer and coconut mixture. Press into the bottom of a 9x13 pan. Layer ice cream on the top of the mixture. It doesn't have to be level. Next, sprinkle the remaining vanilla wafer and coconut mixture over the top. Freeze for 8 hours to over night. Serve with syrup of your choice and/or fresh fruit!

Next, sprinkle on the second half of your wafer and coconut mixture. Place in the freezer for at least 8 hours, or overnight. You can serve with any syrup of your choice, fresh fruit, or just enjoy it plain!
