Weekend Recap & Our Favorite Wheat Bread Recipe
We had the best weekend together as a family. I have been in a little mental slump with myself that I worked really hard to get out of and realized that I am struggling mentally because I haven’t been taking care of myself like I should. I haven’t been meditating, doing my scripture study, exercising, or even eating decently healthy. I realized when I let these things “slide” then I struggle emotionally and mentally more than ever. I am working this week to get back on track of taking care of ME because if I am not taken care of then everything else will fall apart as well and that just would be bad.
Here are a few things that happened this weekend:
- King had a soccer game on Saturday in the rain and it was so funny to see Lettie all bundled up sitting on her own chair watching the game. I giggled at her the whole game with her little hood on.
- We took some fun pictures for Buick at the pumpkin patch (okay, let’s be honest a random corn field on the side of the road by my moms house because I didn’t want to pay $18 per person to get into the pumpkin patch. Ummm no thank you. We also took some after King’s soccer game with our collapsable wagon because my favorite part of the Buick is that we can put the wagon in the back fully up after a game and it just wheels right in and then it is super easy to unload when we get home too.
- My grandpa took me over to his shop (like a work shop not like a store shop) and let me pick out an old door. I saw this one and was instantly smitten with it. Isn’t the character and detail of it truly amazing? Now I want to hang it in my house somewhere, its just figuring out where… A little story about the door, there was a really old run-down house in front of my grandpa’s shop. He decided to re-do the house and apparently the owners had done an addition to the house and just covered up this door. When he started gutting the inside he FOUND THIS BEAUTY and set it aside and now it gets to be at my house with all it’s amazing craftsmanship!
It was really cold rainy weather this weekend so we made our favorite wheat bread. I love fall and winter because of all the yummy baked goods and baking with my littles while we are all cozy inside. It is one of my favorite things. This wheat bread is so easy and only takes a little bit over an hour and a half from start to finish with rising and baking. We are completely obsessed with it and hope that you will love it as much as we do!
Simple Wheat Bread Recipe:
Ingredients:
5 1/4 Cup Hot Water – Tap Water is Great
2 TBSP Salt
3/4 Cup Honey
6 Cups Wheat Flour – 2 Cups Flour
4 TBSP Yeast (heaping)
2 TBSP Oil
4 TBSP Lecithin
1 Cup Gluten
Mix in mixer (Bosch or Kitchenaid) with whisk attachment until combined:
Hot Water
Salt
Flour (6 cups)
Honey
Let sit for 30 minutes (yes without the yeast)
Add in oil, lecithin, gluten, & yeast. Add in 2 cups flour. Mix with dough hook on mixer. Add in 1/2 cup flour at a time until the dough is sticky but does not stick to your fingers.
Knead in your mixer for 10 minutes. Make sure it is the full 10 minutes.
Break dough into 6 large bread pans evenly.
Let bread rise for 30 minutes.
Bake at 350 degrees at 30 minutes.
